Mung Beans
Culinary Uses:
Sprouting: Mung beans are the source of the crunchy sprouts commonly used in salads, stir-fries, and spring rolls.
Moong Dal: The split and hulled form is used extensively in Indian cuisine to make light, easily digestible lentil dishes and savory pancakes.
Whole: Used in Asian desserts, savory pancakes, and fillings.
Appearance: Small, oval-shaped beans with a vibrant green outer skin and a pale yellow interior. They are often sold whole or split (without the hull, revealing the yellow color, known as moong dal).
Flavor and Texture: They have a very mild, slightly sweet flavor. They are highly valued for their quick cooking time compared to many other beans.
