Brown Lentils: The most common and widely available type. They have an earthy flavor, are quick-cooking, and tend to lose their shape, making them great for general soups and thickening.
Black Lentils (Beluga):
Small, black, and resemble Beluga caviar, hence the name.
They have a rich, deep, earthy flavor and hold their shape better than most other varieties.
Often used in visually striking salads or as a replacement for meat in rich dishes.
Yellow Lentils: Similar in use to red lentils, they are often sold split and used in various Indian and Asian dals and purees, offering a very mild flavor and creamy consistency.
